Chocolate Chip Cookie Recipe

Chocolate Chip Cookies
2/3 C. Shortening
2/3 C. Unsalted Butter, room temperature
1 C. Granulated Sugar
1 C. Brown Sugar (Preferably dark brown, but light works well too)
2 Eggs
1 Tbsp. Vanilla Extract
3 1/2 - 4 C. All Purpose Flour
1 Tsp. Salt
1 Tsp. Baking Soda
1 12oz. Bag Chocolate Chips
Heat oven to 350'. Line baking sheet with a piece of parchment paper. In a large mixing bowl, cream together butter, shortening, granulated sugar, brown sugar and vanilla extract until smooth. Set aside. In another bowl, sift together the flour, salt, and baking soda. Add the flour mixture to the wet ingredients a bit at a time. Stir until just combined. The dough should be thick and hard to stir, not sticky. Add 1/2 C. flour at a time if needed. Stir in chocolate chips (or use your freshly washed hands to fold the chocolate chips in. This prevents over stirring, and you get to lick the dough off when your done :) Bake at 350' for 11 minutes. Remember that every ones oven temperatures vary considerably. I check my cookies after 9 minutes. They are done when they are a light golden brown on top, and around the edges. Let cool on baking sheet for 3 minutes before transferring to a cooling rack.
